Loaded Sweet Potato Nachos

What you need

Instructions
Prep the Sweet Potatoes 2 Wash the sweet potatoes and dry thoroughly. Microwave for 30-60 seconds before proceeding to slice (in order to soften slightly). 3 Slice the sweet potatoes using the PC Rapid Prep Mandoline on the Slice, #6 to get ¼-inch rounds or thin chips. 4 Because of the density of the sweet potatoes, make sure you use ample pressure. Cook the Sweet Potatoes: 6 Preheat the Deluxe Air Fryer & Oven or oven to Heat & Crisp (375 F) for 17 minutes. 7 Arrange sweet potato slices in a single layer on the sheet pan. Coat sweet potatoes with avocado oil (or high heat oil) and salt before baking. When prompted to “Add Food” place the sheet pan into the oven and press Start. 8 Rotate the pan half way through for even cooking. Cook the Ground Turkey 10 Heat some oil in the PC Stainless 10" Sauté Pan over medium heat for 2-3 minutes. 11 Add ground turkey and season with salt and pepper or some Taco Seasoning. 12 Let the meat sear for a few minutes, then break it up with the PC Mix ‘N Chop and cook until no longer pink. (about 6–8 minutes). Prepare Toppings 14 Drain and rinse black beans using the PC Can Strainer. 15 Grate cheese with the course side PC Adjustable Double Grater. 16 Chop cilantro with the PC Foundations Chef’s Knife. 17 Optional: make a quick guacamole in the PC Electric Twist & Chop. Assemble the Nachos: 19 When the sweet potatoes are done, preheat the top oven to broil for 3 minutes. Top the sweet potatoes with the cooked turkey, black beans, and cheese. 20 Repeat layers as desired. Melt the cheese: 22 When prompted to “Add Food,” place the pan into the oven and press Start. Add Fresh Toppings: 24 Remove and top with cilantro, jalapeños, sour cream, and any other optional toppings. 25 Serve and enjoy! 26 Grab a plate and dig into this fully loaded, customizable meal.View original recipe
