What you need

tbsp honey

fresh lime juice

tbsp extra-virgin olive oil

tsp kosher salt

tsp freshly cracked black pepper

watermelon
english cucumber
cup mint leaves

cup fresh basil leaves

cup feta
Instructions
0 Make the dressing: In a small bowl, whisk together the ginger, honey, juice from one lime, olive oil, salt and pepper. Taste it, the lime juice should be coming through, so add the second lime if needed. Set aside. 1 Make the Salad: In a large serving bowl, combine the watermelon, cucumber, mint, basil, and ¼ cup of the feta. 2 Top the watermelon salad with the dressing and gently toss to combine. 3 Top with the remaining feta cheese and serve right away. 4 Enjoy!View original recipe
