What you need

tsp salt

fl oz lemon juice

cup turkey meat

tsp thyme leaves

clove garlic clove

tbsp olive oil

cup brown rice pasta

cup turkey stock
Instructions
In a saucepan, bring salted water to a boil to cook your pasta. While this is happening, make the soup. In a large pot, warm the oil over medium heat. Add onion, cook for 5 minutes. Add carrots, celery, garlic, thyme and a generous pinch each of salt and pepper and cook over moderate heat, stirring occasionally, until the vegetables just start to soften, about 10 minutes. Add the pasta to the boiling water and cook according to the package directions. Rinse with cold water and set aside for serving. Add the stock to the pot of vegetables and bring soup to a boil, then simmer over moderately low heat, stirring occasionally, until the vegetables are tender, about 10 minutes. Add the cooked turkey and simmer, stirring occasionally, 5-10 minutes longer. Stir in the lemon juice off the heat, taste for salt and pepper. Add a ladle of the pasta to each bowl and pour the soup on top. Top with a few cracks of pepper and a drizzle of good olive oil and serve.View original recipe
