Shaved Spring Salad with Creamy Tarragon Vinaigrette

What you need

radish

carrot

frisee
cup extra-virgin olive oil

cup plain yogurt

tsp white wine vinegar

tsp dijon mustard

tsp kosher salt

tsp freshly cracked black pepper
tbsp fresh tarragon

tbsp water
Instructions
0 For the salad: 1 Cut the bottoms off of the washed heads of frisée and place in a large, shallow bowl. 2 Using a vegetable peeler, shave the asparagus and carrots lengthwise into strips. 3 Discard the remnants of vegetable that are too thin to shave. 4 Using a mandolin, or a sharp knife, very thinly slice radishes. 5 Top the frisée with the prepared vegetables. For the dressing: 8 In a small bowl, combine all ingredients and whisk well until emulsified. Add 1 or 2 Tbsp of water to thin it to desired consistency. 9 Top the salad with the dressing, toss, and enjoy!View original recipe
