Rudy's Ribs (Low and Slow, Sauce-less)

My favorite way to cook ribs is low and slow and sauce-less. I call these “Rudy’s Ribs” after my dear friend’s father Rudy who makes his ribs this way and they are always perfect - falling off the bone, filled with flavor but not dominated by the spices, and SO simple.

What you need

tbsp onion powder

tbsp smoked paprika

tbsp chili powder
tbsp dried oregano

tbsp olive oil

tbsp kosher salt

bunch baby back ribs
Instructions
Take a couple of racks of baby back ribs and coat them with a spice mixture. For the spice mixture, combine smoked paprika, chili powder, onion powder, dried oregano, a good tablespoon of kosher salt, and olive oil. Wrap the coated ribs in aluminum foil. Bake at 325F for 3 hours or so. After baking, uncover the ribs and finish them under the broiler for 5 minutes to get a good crust on them. Serve with pickled something (onions, cucumber pickles, slaw, etc.) and simple white rice for a fab combination.View original recipe
