tbsp kosher salt

bay leaves

cup granulated sugar

cup rice wine vinegar

tsp black peppercorn
lb ramps
Instructions
Pack the jars full of ramp bulbs, leaving an inch headspace. Bring the water, vinegar, salt, sugar and spices to a boil, stirring to dissolve the salt and sugar. Pour the boiling hot liquid over the ramps in the jars almost up to the brim. Put the lids on the jars and store the ramps covered in their liquid in your fridge.
