Fill a large pan with moderately deep sides with 1-2 inches of water. Cover and bring to a boil. Once boiling, gently place the eggs in the pan and turn the heat to low. Cover and cook for 6-13 minutes depending on how set you like your egg. While the eggs cook, prepare a large bowl with lots of ice and cold water. When the time is up, ladle the eggs into the ice bath for exactly 3 minutes. To peel, tap the top and bottom of the egg to release air pockets then gently roll with your palm before peeling. If your eggs are fresh, peel in the ice water bowl or under cold running water.View original recipe
