What you need

cup cane sugar

tsp kosher salt
tsp baking powder

tbsp unsalted butter

cup oat flour

tsp vanilla extract

cup peach
Instructions
Heat your oven to 375°F. Place 3 tablespoons of butter in an 8x8 inch baking dish. Place the pan in the oven for 5 to 7 minutes, until the butter has melted. Tilt the dish to ensure it is evenly coated with butter. Whisk together the all-purpose GF flour, oat flour, ½ cup of cane sugar, baking powder, and Kosher salt in a medium bowl. Stir in the unsweetened almond milk and vanilla extract. Mix until smooth. Pour the batter over the melted butter and do not stir; it will be separated, which is okay. Add the 4 cups of diced peaches evenly to the batter and top with the remaining 2 tablespoons of cane sugar. Bake the cobbler until it is just set and lightly golden on top and edges, about 45 to 50 minutes, or until bubbling and golden. It may look a bit wet, but it will firm up as it cools.
