What you need

bunch celery

red onion

cooked chicken breast

pinch cracked black pepper

cup plain yogurt

cup fresh parsley

cup mayonnaise

pinch kosher salt

Note: I use cold chicken when shredding it in the stand mixer. If I buy rotisserie chicken hot or roast breasts myself, I cool it before proceeding. Tear the breasts once or twice and place in stand mixer bowl. Shred the meat in a stand-mixer until finely shredded, and transfer to a large bowl. To the bowl with the chicken, add the celery, onion, mustard, yogurt, mayonnaise, and parsley if using. Season to taste with salt and pepper. Toss to mix completely, cover and store to enjoy all week.View original recipe
