No-Bake Strawberry Shortcake Truffles

Inspired by the Momofuku Milk Bar Strawberry Shortcake Truffles, this healthy version has a rich interior studded with tart strawberries and covered in melted white chocolate.

What you need

tbsp coconut flour

tsp kosher salt

cup coconut oil

tsp vanilla extract

cup maple syrup

cup freeze-dried strawberries

cup white chocolate chips

0 In a medium bowl, mix all of the truffle ingredients together. Line a small baking sheet with parchment or silpat sheet. 1 Using a small ice cream scoop or two tablespoons, scoop out the truffles onto the lined baking sheet. 2 Freeze the truffles for 20 minutes. 3 Meanwhile, make the white chocolate coating: 4 Meanwhile, in a small bowl, melt the white chocolate and 1 tsp coconut oil in the microwave, stirring periodically, until melted and glossy. 5 Dip each truffle into the white chocolate, covering it completely, and place back onto the lined baking sheet. Top the truffles with a bit of crushed dried strawberry. 6 Freeze again for 20-30 minutes until chocolate is set and truffles are cold. 7 These are ready to consume or may be stored in the fridge for up to a week. 8 Enjoy!View original recipe
