Meal Prep Turkey Meatballs with Broccoli

Turkey-Broccoli Meatballs made with frozen broccoli are a perfect dinner to make when you want to pack veggies and protein into your family’s meal. These golf ball-sized meatballs are baked on a sheet pan.

What you need

tbsp milk
tbsp olive oil

tsp dried basil
tsp cracked black pepper

cup panko breadcrumbs

clove garlic clove

tsp kosher salt

lb ground turkey

egg

oz broccoli
Instructions
On a large cutting board, mince the defrosted broccoli florets finely with a knife. The texture should be close to a puree and very finely chopped so the broccoli blends in and throughout the meatballs. Heat the oven to 400 degrees F. Line the bottom of a large sheet pan with parchment paper and set aside. In a large bowl, combine all of your ingredients. Gently but thoroughly combine, preferably with your hands so as not to overwork the mixture. Using a small ice cream scoop, measure out the meatballs and roll gently in hands to shape into a ball. Place onto the prepared sheet pan. Drizzle tops lightly with olive oil. Bake for 20-25 minutes, or until browned and just cooked through. Serve meatballs with homemade or store-bought tomato sauce on the side for dipping, or with sauce over spaghetti.View original recipe
