Greek Meatloaf with Feta and Roasted Peppers (Gluten-Free)
Serves 920 mins prep50 mins cook
This is a favorite around here. Not winning any awards for refinement, but that’s what I love about simple comfort food dishes like this one. Unfussy, satisfying, and super flavorful. Feel free to sub in regular breadcrumbs if you want to go the gluten route, and to use either all lamb or all beef, or even turkey. Do you.

What you need

clove garlic clove

tbsp balsamic vinegar
tbsp dried oregano

tbsp tomato paste

lb ground beef

cup feta

tbsp kosher salt

lb ground lamb
Instructions
Preheat oven to 375 degrees. Line a large baking sheet with parchment paper. In a large bowl, stir together all ingredients except the meat. Add meat, and gently combine. I like to do this with clean hands, but you can use a large wooden spoon as well. Just be careful not to overwork the meat so it doesn’t toughen up on you. Transfer the meat mixture to the lined baking sheet and shape into a large log. Bake for about 45-1 hour, until cooked through. Serve with extra feta and chopped fresh oregano or parsley.View original recipe
