Instructions
Steam eggs in 1-2 inches of gently boiling water (I use my @allclad pan with lid). Steam for 6-12 minutes depending on how you like your eggs. 10 to 13 minutes gives you a hard cooked egg. Place in ice bath for 3 minutes then tap cracks on the top and bottom of the eggs before rolling with your palm. If the eggs are fresh, I peel under water, otherwise no need.
