cup full-fat cottage cheese

tsp kosher salt

fl oz avocado oil

Instructions
In a bowl, whisk the eggs, cottage cheese, salt and pepper. Heat a nonstick skillet over medium-low and spray or drizzle with avocado or olive oil. When heated, transfer the eggs to the skillet and slowly fold them continuously until cooked for 2-3 minutes. Remove from the heat and serve.View original recipe
