In a medium saucepan, combine the soy sauce, honey, and water. Bring the mixture to a simmer and cook for a few minutes, stirring continuously, until it just begins to bubble. Remove the saucepan from the heat and stir in the grated garlic and orange juice. Let the marinade cool completely. While the marinade cools, season your meat or fish with salt and pepper and coat it lightly with a neutral oil. Once the marinade is cool, combine it with the seasoned meat or fish, ensuring everything is thoroughly coated. Large ziploc or silicone bags work well for this.
