What you need

head romaine lettuce

clove garlic clove

cup cilantro

cup lime juice

cup olive oil

tsp salt

can black beans

cup water
cup pepitas
Instructions
Combine salad ingredients in a large bowl, saving the pepitas for serving, and toss together to mix. Set aside. For the dressing, in a blender blend avocado, garlic, lime juice, cilantro, yogurt, olive oil and ½ cup water. Pour the dressing over the salad and toss if serving right away, topped with the pepitas.
