What you need

egg nog

cup maple syrup

cup black walnuts

cup oat flour

cup almond flour

tsp baking powder

tsp baking soda

tsp ground cardamom

tsp ground ginger

tsp ground cinnamon

tsp kosher salt

cup unsalted butter

cup cream cheese

cup monk fruit extract

cup candied ginger
Instructions
0 Preheat the oven to 350 degrees F. 1 Line your pan with parchment and spray with baking spray. 2 In a large bowl, mix together carrots, eggs, and maple syrup and whisk to combine. 3 In a separate bowl, combine the flours, baking soda, baking powder, spices, and salt and whisk lightly with a fork. 4 Add to the wet ingredients and stir to combine. Fold in the walnuts. 5 Bake for 28-32 minutes until tester comes out clean. Let cool briefly in pan and finish cooling completely on a rack before frosting. 6 To make the frosting - Beat together the butter, cream cheese, and powdered sugar with a hand or stand mixer until smooth and fluffy. 7 Spread over cooled cake and garnish with the candied ginger if using.
