Baked Stuffed Shrimp Casserole

This recipe is based off of the Baked Stuffed Shrimp typically made on Christmas Eve, but adapted into a casserole format. It's lightened up with less butter and uses a simple cracker swap, like Simple Mills, though you can use any cracker you prefer. The recipe can be doubled to serve a larger group.

What you need

lb raw shrimp

cup fresh parsley

clove garlic clove
can lump crab meat

tsp olive oil

tsp kosher salt

cup cracker crumb
Instructions
Preheat oven to 425 Degrees F. Butterfly your cleaned shrimp by cutting down the back of the shrimp spine most of the way through, but not all the way. Add to a bowl and season with olive oil, salt and the black pepper. Set aside. Make your stuffing by combining crab meat, cracker crumbs, garlic, parsley, lemon juice and zest, and melted butter. In an oven safe baking dish, arrange the seasoned shrimp evenly around the dish, cut side down, so the tails are facing up. Spoon the stuffing over and around the shrimp evenly. Bake for 12-14 minutes, until just cooked through and top is golden brown. If you’d like the top more browned, broil on high for 1 minute. Serve with sides of lemon wedges.View original recipe
