Roasted Cauliflower Tacos with Avocado Lime Crema

If you’ve never tried roasting spiced cauliflower and putting it into a tortilla with a cool, creamy sauce this is your nudge. This roasted cauliflower is a fantastic recipe in and of itself, but give it some avocado-lime crema action and it’s a whole other level. We aren’t trying to pretend cauliflower is ground beef, or carnitas here, we are honoring it for the versatile, hearty vegetable she is and having a grand old time doing it.

Preheat the oven to 425º degrees F. Arrange cauliflower on a large baking sheet and add paprika, chili powder, onion powder, salt and olive oil. Toss to coat evenly. Roast for 35-45 minutes until cauliflower is browned all over, stirring halfway through to cook evenly. While the cauliflower is roasting, make the crema: Scoop out the avocado flesh and add it to a blender with the cilantro, lime juice and salt. Blend for a few seconds until smooth and creamy. When the cauliflower is done, warm the tortillas by charring on a gas grill open flame or microwaving them for 20 seconds or so. On each tortilla, spread the avocado lime crema, add the cauliflower, and top with pickled onions, queso fresco, cilantro and lime. Serve right away.
