I’m really letting you in on my nightly snacking rituals lately aren’t I? ☺️. It’s gluten, dairy, and refined sugar free and so much cheaper than boxed “healthy” cereals. Because Netflix is more fun with a big bowl of cereal, it’s the rule. This recipe yields 4 cups of cereal.

Preheat oven to 350F. In a large bowl, mix the oats, rice cereal, cinnamon, cardamom, and salt. Add the egg whites, maple syrup, and vanilla and gently stir with a spatula until both cereals are evenly coated. Spread the mixture evenly onto the prepared pan. Turn the granola out onto a silpat or parchment lined baking sheet and bake for about 35-40 minutes, or until the mixture is browned and crisp on top. The cereal will still feel soft underneath, and will crisp up as it cools so don’t worry if it’s not crisp throughout. Let the granola cool for 10 minutes before breaking apart any extra large clusters. Cool the granola completely to room temperature on the pan before transferring to an airtight container.
