These pancakes were born out of necessity, and have changed my mom life. Saturday morning pancakes that are basically every food group in a pancake?! Yup. My kids love them and if they have these I don’t stress the rest of the day about their food.

Blend all ingredients (rolled oats, GF AP flour, baking powder, salt, ripe banana, almond butter, cauliflower rice, eggs, milk) in a high speed blender, adding more milk if needed until smooth. Cook the batter on a griddle or skillet for 2-3 minutes per side on medium-low heat until golden brown and cooked through.
