Add a bit of water to your eggs while whisking with salt and pepper. For 8 eggs, use about 1/4 cup of water. For one or two eggs, use a tablespoon of water. Heat a nonstick pan for one minute over medium heat. Add fat (avocado oil or leftover bacon grease). When the eggs are 3/4 of the way done, turn off the heat and let them finish from the residual burner heat while stirring for another few seconds. Take off the heat and serve immediately.
