On stovetop, heat a large pan over low heat. Add the olive oil. Cook onions, jalapeno, and garlic with a big pinch of salt, low and slow 30 minutes. Stir as needed to cook it evenly and prevent anything from burning. Take garlic out of the skin and discard the skin. Add everything to a blender with the rest of the ingredients. Blend until it’s smooth but still has some texture. Serve with potato chips and crudités.
