Preheat oven to 450 degrees F. Peel potatoes and dice into 1-2 inch pieces. Throw the diced potatoes in a medium pot covered with cold water and a nice handful of salt. Bring to a boil, then turn down to simmer and cook until fork tender. You want them soft but not falling apart. Strain in a colander. KEY step: Bash them around against the sides and bottom by shaking the colander lightly for 5 seconds. This texturizes the outside and gets them insanely crispy. Put the potatoes on a sheet pan with the olive oil, 1 tsp more of salt if needed, and some cracked pepper. Roast at 450 degrees F for 25-40 minutes, depending on how big your cuts are and how crispy you want them.
