Chop the red pepper, cabbage, and cilantro to your desired size for the salad. Cook the noodles according to package directions (usually just boiling for a few minutes). For the sauce, puree all sauce ingredients (almond butter, water, soy sauce or tamari, sesame oil, honey, lime juice, garlic, chili sauce, Kosher salt) in a food processor or blender. It’s okay if it’s still slightly chunky. To assemble, toss everything together with enough dressing to generously coat everything. Serve warm or cold with roasted almonds on top.
