Preheat the oven to 425 Degrees F.
Roughly chop your pears into cubes - they don't have to be fancy, just try to keep them a similar size for even baking.
Toss everything together in a 9x13 baking dish, dotting the coconut oil on top.
Bake for 20 - 40 minutes depending on the variety and ripeness of your pears and how soft you would like them. Toss every few minutes.
Serve with whipped cream or ice cream and granola on top, if desired.
